A baking sheet – if you’re making gummy rolls rather than gummy bears you need 1-2 baking sheets lined with baking parchment.

A large mixing bowl – to mix all the ingredients together.

A juicer or blender – if you’re making all-natural gummy rolls without agar agar you need a juicer to purée the fresh berries. For making agar agar gummies you don’t need a juicer as long as you’re buying ready-made juice.

  • 2 teaspoons Agar-Agar powder [Powder, NOT flakes!]

For natural vegan gummies without sugar, you need these easy-to-get ingredients

Berries – fresh strawberries, fresh raspberries, and fresh blueberries are my favorite berries. For this easy all natural ingredients unsweetened gluten-free vegan gummies you need about one pack of fresh berries (around 350g).

Note: I’ve only tried using fresh berries for making gummies, so I don’t know if frozen berries will work. Theoretically, it should work but the gummies may need to bake a little longer to give the extra liquid a chance to evaporate and make the gummies get the best gummies texture.

Lemon juice – lemon juice adds freshness and a balance of flavors between the natural sweetness of the berries and the tart lemon juice. Alternatively, you can use lime juice.

Maple syrup – or your choice of natural sweetener. This is optional and you can easily leave it out, but as I have a sweet tooth I like to add maple syrup and drizzle my gummy rolls with coconut sugar.

  • Place the gummy bear molds on a large plate or tray ready to fill (this tray is going into the refrigerator so make sure it fits). If you’re making gummy rolls line 2 baking sheets with baking parchment and set aside.
  • Now, place juice, sweetener, and agar agar powder in a small saucepan and bring to a quick boil while stirring. It should take 5-6 minutes.
  • Let the juice mixture boil for a minute while stirring before removing it from the heat. Leave the mixture to cool for 5-10 minutes. It should be hot when it’s poured into the molds but not super hot so it’s scalding.

Note: don’t wait too long as the gummy mixture will start to harden as it cools down. If you’re making gummy rolls you want the mixture just a little thicker so it spreads out easily while still maintaining the thickness.

Making the gummy bears

  • Next, use the dropper that came with the gummy bear molds (or carefully use a spoon if you prefer) to transfer the gummy liquid into the molds filling them up all the way.
  • Place the molds on the tray in the refrigerator for 10-20 minutes while the gummy bears cool and harden. Once the plant-based gummy bears are hardened, take the mold out of the refrigerator and pop them out onto a plate or into a clean jar or container.
  • Repeat with all your desired flavorings until you have a large batch of gummies.
  • Super easy way to make natural unsweetened vegan gummies
  • Preheat oven to 100 degrees Celsius and line a baking sheet with baking parchment.
  • Rinse the berries and cut any leaves off. Transfer the berries to a blender or juicer and add the lemon juice. Blend until the berries are a smooth purée.
  • Pour the berry mixture into a small saucepan and heat at medium heat for around 10 minutes while stirring occasionally.
  • Next, pour the berry purée onto the lined baking sheet and spread it out into a thin even layer. Bake the berry purée in the middle of the oven for 2-3 hours depending on how long it takes for the liquid to evaporate.

  • After two hours of baking check the gummies. Press a finger on the berry purée. If the mixture sticks a little the gummies need to bake longer. If you can touch and press down gently on the gummies with anything sticking to your fingers then they are ready.
